碳同位素在不同奶源鉴别中的应用探讨

The Application Exploration of Carbon Stable Isotope Ratio in Identification of Fresh Milks with Different of Sources

  • 摘要: 本实验以牛奶脂肪酸含量及碳同位素为指标,研究普通纯奶与天然有机奶的有机生物标记物和碳同位素组成的差别。结果表明,普通纯奶的这些指标均无明显差异,但天然有机奶与普通奶存在明显的差异。有机奶的多不饱和脂肪酸含量明显高于普通奶,尤其以亚麻酸和亚油酸最为明显,普通奶的亚麻酸含量在0.15%左右,而有机奶的亚麻酸含量在0.36%以上,同时有机奶的亚油酸含量比普通奶高出2%以上;有机奶的δ13C值负于普通奶,其原因是产奶奶牛的食物来源差异。

     

    Abstract: The topic about the source and quality of fresh milk is an international research. The fatty acids content and the carbon isotope ratio were analyzed to record the difference between convention and organic milk. The results show that these indicators of convention milk researched are no obvious difference. But that of convention and organic milk have notable differences, organic milk contained more polyunsaturated fatty acids than convention milk, especially in linolenic acid and conjugated linoleic acid. The content of linolenic acid in convention milk is about 0.15%, while organic milk has a higher content (at lease δ13C values are found in organic milk.
