Determination of Acrylamide in Shahefen Using Gas Chromatography-Tandem Mass Spectrometry

  • Abstract: A method for the determination of acrylamide in food using gas chromatography-tandem mass spectrometry(GC-MS/MS) was proposed, and acrylamide was also detected in non-fried food. The limit of detection is 2.0 µg•kg-1. The method is proved to strong selectivity and high sensitivity, and is suitable for the determination of trace acrylamide in food.
